1 Bag New Grains pizza crust mix
1 1/2 c water (room temp)
1/4 c vegetable shortening, palm fruit shortening or other substitution
Place all ingredients into mixing bowl. With electric mixer, mix on low for 5 min. Let dough rest for 5 min.
Heat oven and metal pan or pizza stone to 450. For pizza crust roll dough very thin, using tapioca starch, 1/8 in or thinner, to desired size. Precook crust in hot oven on hot pan or stone for one to 2 min. Watch it closely, you will see some browning and bubbling. Remove from oven, cover with desired toppings, return to oven for about 2 min. or until cheese is melted. Cut and Enjoy the best Gluten Free Pizza you’ve tasted! For pockets roll dough very thin, cut into about 8 in circle. Put desired fillings in over one half of the circle leaving about 1/2 in rim free from any fillings. Wet the 1/2 in rim all the way around, fold circle in half sealing the rim creating the pocket. After the rim is sealed fold up edge and press edge like the edge of a pie crust so the rim is double thick. Spray both sides with non stick spray. Place on hot pan or stone in preheated oven. Cook for 2 min, flip over with big spatula, and cook for an additional 2 min.
