Ingredients:
- 1/2 cup Vegetable Oil
- 3 Celery Stalks, finely chopped
- 1 Red Onion, diced
- 1 Clove of Garlic, minced
- 2 cups Vegetable stock
- 1 tsp Dried Parsley
- 1/3 tsp Dried Thyme
- 1/3 tsp Dried Sage
- 1/3 tsp Dried Marjoram
- Salt and Pepper
- 2 packages New Grains Gluten-Free Croutons
Heat vegetable oil over medium heat.
Add celery, red onion, and garlic to the vegetable oil. Add vegetable stock, parsley, thyme, sage, marjoram, and salt and pepper to taste. Stir together.
Bring to a simmer for 15 minutes.
Turn off the heat and let it cool for 1 hour.
Preheat oven to 325 F.
Add two packages of croutons to the liquid. Toss until croutons are evenly coated.
Place mixture in a baking pan, cover with foil and cook for 1 hour. You may want to mix the stuffing halfway through cook time.
